Hope you are enjoying the summer so far. I thought you might like a few great recipes for camping, family get-togethers, etc. Sometimes I bake ahead and freeze. (I use freezer bags and foil). It's great for unexpected company and you always have something to offer. I know with the summer heat, you don't feel like baking. I do most of mine early in the morning or late at night. You will reap the rewards. Who doesn't love homemade food? See you next month.


Rita Bush gave me this great recipe. I am serving this for my Bunco get-together at the end of August. Thanks again, Rita.


Rita's Taco Salad


1 pound ground beef or turkey


Taco seasoning packet


1 bag salad greens


1 tomato, chopped


Black olives, sliced


1 small can kidney beans, rinsed


1 small block cheddar cheese, grated


2/3 cup mayonnaise


1/4 cup Italian dressing


1/3 cup salsa


Doritos chips, broken into small pieces


Avocado (optional)


Cilantro (optional)


Brown the hamburger with taco seasoning, set aside. Mix together salad greens, tomato, olives, kidney beans and cheese, set aside. Mix mayonnaise, Italian dressing and salsa, toss with salad mixture. Add Doritos, followed by avocado and cilantro if desired.

Here is a great recipe from Rita Jenkins. I have known her since 1979. We were in the Wranglers together. Now we meet for Bunco.


Rita's Chicken Rice Salad


5 cups chicken, cooked and cubed


3 cups rice, cooked


1 1/2 cups green pepper, diced


1 1/2 cups celery, sliced


1 can (20 ounces) pineapple tidbits, drained


3/4 cup mayonnaise


4 teaspoons orange juice


2 teaspoons vinegar


1 teaspoon salt


1/2 teaspoon ground ginger


1/4 teaspoon garlic salt


1 can (15 ounces) mandarin oranges, drained


1 cup slivered almonds, toasted


In a large bowl, combine first five ingredients. In a small bowl, combine mayonnaise, orange juice, vinegar, salt, ginger and garlic salt. Pour over salad, toss and refrigerate. Just before serving add oranges and almonds. Serves 12.

This is one of my favorite recipes for picnics, breakfast or just a snack. They can be frozen, but are great just out of the oven, with a cold glass of milk.


Brown Sugar Muffins


1/2 cup butter


1 cup brown sugar


1 egg


2 cups flour


1 teaspoon baking soda


1/4 teaspoon salt


1 teaspoon vanilla


1 cup milk


1 cup nuts (optional)


Preheat oven to 375 degrees. Mix together all ingredients (I use a hand mixer). Fill greased muffin tins three-fourths full. You can also use paper baking cups in the muffin tins. Bake for 15 minutes.

This recipe was given to me by Connie (Smith) Swailes. We have been friends since 1979 and rode horses together, all over Hesperia. This is a great recipe. In fact, I just made it this week and took it to a get-together. You will love how moist this cake is. Thanks for many years of friendship Connie!


Connie's Pineapple Wet Cake


2 cups flour


2 cups sugar


2 eggs


2 teaspoons baking soda


1 teaspoon salt


1 teaspoon vanilla


1 1/2 cups nuts, chopped


1 20-ounce can crushed pineapple, undrained


In large bowl, mix ingredients together. Pour into a greased 13 x 9 cake pan. Bake in a 325-degree oven for 50 minutes.


Frosting:


1 1/2 cup powdered sugar


1 cube margarine or butter, softened


1 8-ounce package cream cheese, softened


1 teaspoon vanilla


Cream together and frost cooled cake.

I have made this wonderful recipe many times. Janice Durrant gave it to me in 1980. In fact, I'm making it for the Bunco girls the end of this month.


Orange Sherbet


1 large package orange Jell-O


2 packages Kool Aid (match Jell-O flavor)


2 cups boiling water


3 cups sugar


3 to 4 pints whipping cream


3 tablespoons vanilla


Milk


Boil together, first four ingredients for one minute or until dissolved. In an ice cream freezer, add Jell-O mixture. Add whipping cream and vanilla. Fill with milk. Freeze and enjoy.
