Taking part in her mother and father’s restaurant, Pop’s and Pam’s, during her adolescent years, Sarah Mayne dreamt of one day opening her own eatery.

When the Mile High Cafe moved out of the Hesperia Airport on Summit Valley Road in November, Mayne saw the perfect opportunity to realize that dream.

On Dec. 19, Mayne and her mother Pam Spagnuolo opened the Aviator Cafe inside the airport, working side-by-side as co-owners, replacing the Mile High Cafe that called the airport home for the last 12 years.

“It has always been a dream of mine so it is nice to live that dream and work alongside my parents,” Mayne said.

Though Mayne was quick to jump on the airport's vacancy, the road to opening the Aviator Cafe was a long one. When Pop’s and Pam’s closed down in the early '90s, Mayne continued on with her college education. After college, Mayne found a job with the county but always felt the need to return to her “roots.”

Nowadays, Mayne and Spagnuolo work seven days a week to feed all the hungry customers who have shown up in droves in support of the newly opened cafe.

“We were really overwhelmed with the positive reaction. It is really enjoyable getting to know everyone in the neighborhood,” Mayne said. 

While the eatery can get busy from time to time, the duo can rely on family members just like the old days. When Mayne and her sisters were younger, they would help with the restaurant after they finished their homework. When the restaurant would become busier, the girls were put on payroll “to learn the value of a dollar,” according to Spagnuolo.

The Aviator Cafe offers breakfast and lunch options from cheesy omelettes to bacon Angus burgers, as well as a “little Aviators menu” for children 12 years old and younger. The establishment has been open only a few short weeks but the two already have “regulars” returning for more.

Mayne and Spagnuolo have high hopes for the cafe to grow as they work to reconstruct and re-open the bar upstairs for after hours when the cafe is closed.

“It has been great, we work really well together. Our whole family are hard workers,” Spagnuolo said. “Customer service is our number one.”
